The Process
Harvesting starts after 6-9 months of the flower blossoming where the vanilla pods turn pale green from deep green with each pod acquiring a hint of ripe yellow on the tips.
Our enthusiastic skilled staff hand pick each pod gently from the stalks and place them in woven baskets under a shade.
Grading of vanilla takes place on the same day of harvesting whereby the longest beans with the highest vanillin spice are sorted out and graded basing on the centimeters in length and moisture content...the more moist the better!
Curing of vanilla is the next step where the vanilla beans are cleaned in pure water then soaked in hot water at 70 degrees celsius for 2-5 minutes, they are then drained out and placed on wooden crates where they are left under 50 degrees celsius for two days which helps them turn into a rich golden brown color and emanate a pleasant odor. They are then left outside, layed on high raised beds to dry in the tropical sun for up to two weeks.
Packaging : Vanilla Pods are packed in vacuum seal bags to preserve the freshness and aroma for more than 1 year.
